MAPLE WALNUT CAKE
2 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1 1/3 c. sugar
1/2 c. shortening
1 c. milk
1/2 tsp. maple flavoring
2 eggs
1/2 c. finely chopped walnuts
Sift flour, baking powder, salt and sugar into mixing
bowl. Add soft shortening, milk and maple flavoring. Beat 2
minutes by electric mixer on medium speed or vigorously by
hand. Add eggs and beat 2 minutes more. Stir in walnuts by
hand, turn batter into two greased and floured deep 8-inch
layer pans. Bake at 350 degrees for 30 minutes or until done. Remove
to wire rack to cool. Spread creamy maple icing between, on
top and sides of layers. Slice bananas between layers if
desired.
Creamy Maple Icing:
1/2 c. soft butter or
margarine
1/2 tsp. maple flavoring
3 c. powdered sugar
1 egg
small pinch of salt
2 Tbsp. cream
Beat together until smooth and creamy.
