Merryfield Apple Cake 3 c Flour 2 c Sugar 1 c Oil 1 ts Baking soda 1 ts Salt 2 ts Vanilla 3 Eggs 3 c Apples 1 c Nuts, walnuts 1/2 c Raisins Powdered sugar
Preheat oven to 325. Grease well and flour 2 8" square pans (or 1 9"x13") Chop raisins, peel and dice apples. In large bowl with mixer at low speed, mix well first 7 ingredients, constantly scraping bowl. Beat 3 more minutes, occasionally scraping bowl. Stir in apples, nuts and raisins. Spread in pans. Bake 1 hour. Cool on wire racks. Place paper doily on each cake; sprinkle with powdered sugar; remove doilies.
