Easy Carrot Cupcakes
Makes 2 dozen

1 pkg. spice cake mix
1 1/2 c. shredded carrots
1/2 c. chopped walnuts
1 t. ground cinnamon
16 oz. can cream cheese frosting


Prepare cake mix batter as package directs. Fold in carrots, walnuts 
and cinnamon.

Fill paper-lined muffin cups half full. Bake at 350 degrees for 18 to 
23 minutes or until a toothpick inserted in center of cupcake comes 
out clean. Remove from pans to wire racks to cool completely.

Frost cupcakes with frosting.
