Three Layer Chocolate Cake

2 cups sugar
3/4 cup margarine
3 eggs
1 tbl cocoa
5 tbl hot water -- divided
3 cups flour
1 cup buttermilk
1 tsp almond extract
1 tsp baking soda
Uncooked Mocha Cake Icing (recipe follows)
Preheat oven to 350 degrees. Grease and lightly flour 3 (8 inch)
round layer pans. Cream sugar and margarine; add unbeaten eggs and
mix well. Dissolve cocoa in 2 tablespoons hot water; add to
mixture. Add flour and buttermilk alternately. Add almond extract.
Add baking soda dissolved in 3 tablespoons hot water.
Bake cake in prepared pans for 30-35 minutes. Cool; assemble and
frost with Uncooked Mocha Cake Icing. Serves 10-12.
Uncooked Mocha Cake Icing
1/2 cup margarine
2 cups confectioners' sugar
3 tbl cocoa
2 1/2 tbl cold brewed coffee
1 tsp almond extract
1 pasteurized egg white
2-3 tablespoons sour cream or yogurt
Cream margarine and confectioners' sugar; add cocoa, coffee and
almond extract. Add unbeaten egg white. If mixture is too thick,
add sour cream or yogurt.
