BANANA BLUEBERRY POUND CAKE
1-1/2 cups canola oil
2-1/2 cups sugar
3 eggs
3 cups flour
1 teaspoon soda
3/4 teaspoon salt
1/2 cup buttermilk
2 bananas, mashed
1-1/2 teaspoon vanilla
1 cup pecans, chopped
3/4 cup fresh or thawed blueberries
Mix oil, sugar and eggs. Add flour, soda, salt and mix
together. Toss in pecans, and blueberries. Add
buttermilk, bananas, vanilla.
Bake in greased tube pan at 325ยบ for approximately 1
hour and 25 minutes. Test for doneness with a toothpick or butter knife
