Banana Honey Cake

  2 1/2 cups flour
1 tsp. each baking powder and ground cinnamon
1 tsp. baking soda
4 large eggs
1/2 cup oil
1/2 cup firmly packed brown sugar
1 cup mild honey
2 tsps. vanilla
2 cups mashed bananas
1 cup chopped nuts
Maple Frosting, recipe follows
 
In a bowl, stir together flour, baking powder, cinnamon and soda; set aside. In 
a large mixing bowl beat eggs, oil, sugar, honey and vanilla until smoothly 
blended. Add flour
mixture and beat just until dry ingredients are moistened.
Stir in banana and nuts; or reserve some nuts to sprinkle on top before baking. 
  Makes 6 cups batter.
Grease 9x13-inch baking pan and flour, then fill and bake at 325 degrees for 35 
minutes or until cake just begins to pull from sides of pan and feels springy 
in center. Let cake cool
completely in pan, 2 hours.

  Maple Frosting:
Beat until smooth 1 1/2 cups powdered sugar, 1 teaspoon butter and 1/2 cup 
maple syrup. Makes about 1 cup.
