This sounds like a stack cake.

OLD FASHIONED APPLE STACK CAKE

Ingredients:

2 c sugar

1 c butter or shortening

2 eggs

6 c sifted all-purpose flour

1 t soda

3 t baking powder

1 t salt

1 t vanilla

1/2 c buttermilk

Filling:

1 lb dried apples

1 c brown sugar

1 c white sugar

2 t cinnamon

1/2 t all-spice

Directions: Cream sugar and butter or shortening
together. Add eggs, 1 at a time, beating well after
each addition. Sift flour, soda, baking powder and
salt together. Add alternately to batter with
buttermilk; add vanilla. Chill dough for 3 or 4 hours.
Divide dough into 6 or 7 parts. Use well-floured board
and roll out layers. Bake on cookie sheet at 450°
until slightly browned, about 10 to 15 minutes. To
make filling, wash apples and cover with water. Cook
until tender. Mash thoroughly. Add sugars and spices.
Cool completely. Spread each layer of cake with dried
apple filling. Do not spread filling on top layer. Let
stand in a covered container at least 12 hours before
cutting.
