Southern Cream Cheese Pound Cake 

     From "African-American Holiday Traditions" by Antoinette 
Broussard (Citadel Press, $22.50). 
      
     105 MINUTES 
     15 minutes to make 
     90 minutes to bake 
      
     3 cups cake flour 
     1 teaspoon salt 
     1/8 teaspoon baking soda 
     3 cups sugar 
     3 sticks butter (3/4 pound), softened 
     1 8-ounce package cream cheese, softened 
     6 eggs 
     Juice and grated peel of 1 lemon, mixed together 
     1 teaspoon vanilla extract 
      
     Sift flour, salt, and baking soda 3 times. Cream sugar, butter, 
and cream cheese. Add eggs 1 at a time, as you continue to mix. Add 
lemon and vanilla. Then, gradually spoon in flour 1 cup at a time 
mixing slowly and thoroughly. Pour mixture into a tube pan; place in 
a cold oven and bake at 300 degrees for 1 1/2 hours. Do not open the 
oven before baking time has expired. 
     Makes 16 servings. 
     Per serving: 445 calories; 24 g fat (14 g saturated fat; 49 
percent calories from fat); 53 g carbohydrates; 142 mg cholesterol; 
397 mg sodium; 5 g protein; 0.4 g fiber.
