Hi everyone. I joined this group because I love baking in general, 
but I especially love baking (and eating!) cake. I also have a 
weakness for collecting interesting and different cake recipes. My 
favorite cake however, is plain pound cake. I like making pound 
cakes with just a few ingredients, so here is one of my favorites 
using powdered sugar. It always turns out great and, like all pound 
cakes, it is even better the next day. You may substitute a teaspoon 
of almond or lemon or orange extract for the vanilla, or even a 1/2 
teaspoon each of almond and vanilla if you wanted. 

Ingredients:

1 1/2 cups (3/4 lb.) unsalted butter, at room temperature.
1 pound (3� cups) unsifted powdered sugar
6 large eggs
1 teaspoon vanilla
2 3/4 cups sifted cake flour

Instructions:  Beat butter with an electric mixer until creamy. Sift 
powdered sugar, gradually add to butter, beating until mixture is 
light and fluffy. Add eggs, 1 at a time, beating well after each 
addition. Add vanilla. Gradually stir in flour into creamed mixture.

Butter a 10-inch (12-cup) tube pan. Scrape batter into pan and 
smooth top surface.

Bake in a 300� F (150�C) oven until a slender wooden toothpick 
inserted in center come out clean, about 1� hours. Let cool in pan 
on a rack for about 5 minutes.  Run a knife around edges of tube to 
loosen center of cake, then invert cake onto rack to cool 
completely. 

Store in an airtight for up to 2 days.

Serves 16 to 18
