Delete all files in your tmp/cache/models. Sounds like for some reason your cache for models is not recreating. If you made a change to the tables with your debug at 0 you have to clear those out. Although, at DEBUG > 0 it should have reset them. So, perhaps your server isn't letting CakePHP update those files?
