Tested the downgrade: Had no issues there Just 3.1.0
It starts with artefacts underneath the icons (grey bars where the shadow is supposed to be) Then, when 2 or 3 icons have these artefacts (mostly file folders and mail apps) on dismount of a disk the dock hangs. I can only reproduce the hang when dismounting drives.
