My feeling is that in latin1, the plus-minus character is replaced by
\pm, which works only in math mode, while in utf-8 it is replaced by
something that works both in math mode and in normal text.  But I
haven't more clue, nor any idea of some code that would make things
better, especially if both @math{±} and ± in text are supposed to be
right.

As a side note, Texinfo TeX does not like @math{±}, while the LaTeX
output is ok with @math{±}.
