We can't ever be sure that we're thinking logically either, as we think the thoughts our brains make us think, and those thoughts might be illogical and yet at the same time seem to us, because of some quirk of the way our brains are built, as entirely logical. How would we ever know if what we consider logic is really illogic?

Is that a serious question?  In case it's not, my short
answer is that we don't ever "know", but eventually get
to use Okham's Razor.  It would be very hard for illogic
to consistently hide from us.
