There are just two ways for this to make sense:

A] Gujjus run a lot of gas stations in the US....? Is that true?

B] People think of Gandhi as a gujju first and an Indian second...? This
seems kind of unbelievable to me but then I am sitting many a continents
away.....

A significant fraction of gas stations/convenience stores in the US are
run by people from the Indian sub-continent. An example of this is the
owner who graduated first in a class of 100,000 from C.I.T.* on the
Simpsons.

Its a bit of a stereotype, but not really a bad one. Its more of a
generalization. Almost everyone has had personal dealings with someone
from India/Pakistan/Bangladesh in a convenience store; and for many that's
their only/main way of encountering folks from that area.
