For larger jobs, or where graphics and tables make selection difficult, you can always use Adobe's conversion service:

Send the PDF as an MIME e-mail attachment to
[EMAIL PROTECTED] or [EMAIL PROTECTED]
It will return, converted, as either a text file or html file. Very quick, very easy, but fairly ruthless in stripping out fancy formatting.
