That's generally a relatively risky move. It turns an enemy unit into
one of yours.
You have to be in the square with your target for it to work. Select the
conversion order and tab to the thing you want to convert.
This is risky because priests can't fight, and coordinating it so that
your priest is defended without killing the enemy unit is pretty
difficult. Best used on buildings if the enemy has one you really want
for some reason - but by the time you have priests and conversion you
probably have most of the buildings anyway.
