This has to do with the email body being in HTML/rich text format, and that's why you're hearing about cells.

Depending on the actual content you want to forward, you might sometimes need to change the formatting officially between rich text and plain text in something like outlook express.

I do that using the key strokes:
Alt + O
R
Alt + O
T

The alt + O activates the formatting menu, and the R is for rich text and T for plain text, and then you should be able to edit the body normally including removing lists of previous addresses etc.
