In that case, the minimum you should do is to make sure you have a current catalog and configuration backup so you can easily revert back if anything failes.

The most convenient solution, if installed accordingly, would be to run a catalog dump and then just copy the complete /opt/bacula tree to some removable media.

All of that is the paranoia part. The upgrade with properly built packages should work smoothly, so the plan you outlined is good.
