Hi folks, I found the answer to my own question: You do in fact seem to have to delete the extra volume(s) from the pool in question before you can resize it.
I used "delete volume" for the pool in question, deleting the oldest one of the bunch, then did another "update pool from resource" and then both maxvols and numvols showed the correct values.
