It looks like I finally found a solution... Despite http://www.bacula.org/5.0.x-manuals/en/problems/problems/Dealing_with_Firewalls.html showing that you only need 9102 open on your Client.
Opening up Both Incoming & Outgoing ports for 9101, 9102 & 9103 on the client server fixed the connectivity issue.
