these PST files are really annoying!

there is the delta plugin which could be used (Bacula Enterprise Version).

or you could use a software to export the pst files to small files 
(example: http://www.mailstore.com/de/mailstore-home.aspx)

or you just live with the fact, that you need to backup the whole file 
everyday.
