The problem is the volume retention period only begins when the volumes are marked Used or Full. All but 1 of your volumes are marked append so bacula has no need to purge anything.
I believe you want to get rid of the 200GB size restriction on the volumes. This parameter really is meant only for disks. Then make 5 pools one for each day. Keep the 6 day retention. Add a volume use duration of less than 1 day.
