You need to read the manual, director configuration, fileset chapter, section about includes and excludes. Basically, you just add an options section to the includes where you define the pattern a file has to match, and "exclude = yes". This is fairly complicated; you'll probably need some iterations of reading the manual, changing the configuration, testing and reloading it, and 'estimate listing' commands. You can also search the list archives for some examples - there are many of them available by now.
