Update:

F-secure helpdesk inform me that if an executable is exempted from 
f-secure real-time inspection, then it also exempts files which opened by 
that executable are also exempted from real-time inspection.

I haven't tested this (yet), but if it's true then it's a far better 
solution than disabling all real-time scanning for the duration of a 
backup.
