I was able to restore a Windows 2003 Server using Bart PE. The only problem I ran into while doing my testing was restoring a non-scsi based client onto scsi-based server hardware. This failed due to drive complications which happens with every backup solution so I wasn't that worried about it.
When I restored the server onto a similar hardware platform the server came up nice and clean and is still running. Like I said - I've done it with Win2K. It wasn't pretty, and definitely not for the feint of heart, but it worked and didn't cost me $600/server for some imaging software. Yes, I'll do a write up.
