sigh .. sorry but editing the config file that lays them out seems like the 
best way to me.
Without shifty you cant rename them dynamically, but the way im seeing your 
working procedure you have pretty well defined roles for each tag. So naming 
that tag in the config file shouldent really be a problem.

I have gone so far as to assign default programs to my tags. So on tag 3 my 
"www" tag modkey+p (I like it better) runs firefox, and on tag 4 my "mail" tag 
modkey+p runs mutt in a terminal.

As part of that config I also set the default layouts for those tags. I have a 
copy of firefox started on any tag in my www tag, but since its mainly for 
browsing it is set to on the fullscreen layout by default. My IM tags on the 
other hand use fair tilling layouts.

Hmmm im sure there is a way using awesome-client, but I havent been that 
finicky about my layouts yet. I prefer more dedicated tags and rather switch 
between them.

Hehe good way of approaching this particular list I think, awesome is a pretty 
diy window manager. I dont think there are too many "advanced" users running 
the default config. That being said there are loads of configs being shared all 
over the place. Quite a couple on github so its easy to kee up to date with 
them as wel. Personally I think awesome is more about how you want to do it, 
than how it lets you do it. Rather than see what it offers you should spend a 
bit of time thinking about what you really want and then set about getting 
there bit by bit.
