Sorry, but `electric-pair-mode' and the feature Mosè and I are talking about exclude each other. AUCTeX binds $ to `TeX-insert-dollar' in tex buffers which implements a special behavior, and as you've already found out, `electric-pair-mode' needs $ bound to `self-insert-command'.
