You sound like all of the die hard iPhone developers I've ever talked
to.

Move your assets to SD.
Download them to SD on first run.
Encrypt them if you wish and decrypt when running.

But don't produce 10+MB apps without a really valid reason*.

* - Piracy of content, is not a reason. Because people that will want
to get to your assets will get to them on the internal mem as easily
as on SD.
