I have just tried 'arecord':

arecord test.wav
Recording WAVE 'test.wav' : Unsigned 8 bit, Rate 8000 Hz, Mono
Aborted by signal Interrupt...
.

It works, i.e. I can hear sound playing back it through 'aplay'.
