The question is what's the equivalent in alsamixer, if any. Or
is it right that I can't configure it with alsamixer ?

There should be a control called "Capture" in the capture view of
alsamixer (F4), just press "M" to unmute it.
Pressing "M" in "Capture" does nothing. In fact, it does nothing in
any capture setting.

Is it expected ?
But I guess that 'amixer sset Capture toggle' , which used to enable
it, now disables it, so that may be the reason it got disabled.
Is there any way to restore the default settings after the modules are
load, so that I can carefully check it without reinserting them ?
Well, I rebooted without having an /etc/asound.state and using
'amixer sset Capture toggle', and can confirm that recording
doesn't work without using 'amixer sset Capture toggle' from
the shell after it boots.
