Why would you want that? You would shut out hundreds of applications
that don't understand ALSA yet.

Regarding your problem: I don't know, if the ESS soundcard has a
supported hardware synth. es1370 and es1371 don't have one, AFAIK. 
If you don't have a hardware synth on your card, you need a software
synth. Try Timidity or fluidsynth.
