If it has USB, you could try attaching a couple of cheap USB sound devices to it, e.g. the iMic. I don't know how many of these you can use at once...

Another option would be something like a used Delta 44,There would be some curious looks around here if I started ebay'ing audiophile cards with the company credit card. There are a few home studio guys around here including me, I have an M-Audio 2496 in this box here. ;>
which would give you 4 analog inputs; with the aforementioned
asoundrc magic, you could conceivably use it as 2 stereo
devices or 4 mono devices.
The delta would probably work, but those 1/4 inch jack breakout boxes would require a lot of messy wiring conversions. :<
