I fixed my own problem.

What was happening was that I had my sound card module in /etc/modules.  That
was loading the modules long before /etc/init.d/alsasound ever ran.  So by the
time alsasound was called, the modules were in place - and the sound stayed
muted.

Long live ALSA.
I can't wait until it's in the main kernel tree.
