I think it would be fine to have it all on one page with summary/details for the texts, but having everything on separate pages would be fine, too.
Or both, if possible with reasonable effort, akin to MediaWiki transclusion. (I used Wikidot when I held Notary several years back, but if it supports transclusion then I was unaware of it; I just had one page per contract, then a link index.)
