Hi, I am afraid that you wont be able to get countries and regions of your shopping products via AdWords API. Could you please post your question at the Google Shopping and Merchant Center Forum <https://www.en.advertisercommunity.com/t5/Google-Shopping-and-Merchant/bd-p/google-shopping#>? You might be able to get list of country via Google Merchant.
