If you doing a search on the board with the word incremental, you'll find
this kind of discussion has been done a number of times.  Incrementals
forever seems to be a fairly common strategy (it is what we use at my
company).  As for amount of data backed up, that depends on your backup
strategy.  I am the NT client admin here (among other things), so I don't
know the commands to issue at the ADSM master console level, but the sched
log on the clients will give the amount they back up.
